January is National Oatmeal Month. February is National Heart Health Month. Valentine’s Day is of course about celebrating the ones we love. What better way to show that love than with a hot, heart healthy Oatmeal breakfast on this special day of Love.
To allow myself time to relax and not worry about preparing double breakfasts on days that I want to be able to relax and enjoy eating a hot breakfast with the family, I will often prepare my Slow Cooker Apple, Brown Sugar, Cinnamon Oatmeal overnight. It takes just a few minutes to prep it before bed, and it’s hot and ready to go first thing in the morning.
This recipe warms the hearts and bellies of my favorite guys, and I love it because I know it’s healthy and good for them!
To begin, I used a dab of butter on the sides and bottom of my slow cooker to prevent the oatmeal from sticking. The recipe calls for 2 sliced apples, but I added 4 to this batch because the kids like them so much. I used my Apple Corer Slicer to slice them and then layered them in the bottom of my slow cooker. If you are a stickler for following a recipe, I included the original at the bottom of the post, I like to make changes here and there to match my family’s preference.
Next add 1/3 cup of brown sugar and 1 tsp of cinnamon.
I add about 2 cups of Oats and 4 cups of Water. If you are doubling the recipe, I only add 7 cups of water – my family prefers thicker oatmeal. For a single batch, I’ll typically pour just over 2 cups of oats and just under 4 cups of water. Also, I try not to let it go for longer than 7-8 hours, or it will start to stick to the sides and get crusty on top. I start this just before I go to bed and turn it off ASAP when I get up in the morning so it’s just right.
The finished product doesn’t last long around here, but it does reheat nicely if you’d like to make a larger batch to have some later in the week.

Ingredients
- 2 Sliced Apples (I used Pink Ladies because they’re our favorite)
- ⅓ cup Brown Sugar
- 1 tsp Cinnamon
- 2 cups Oatmeal
- 4 cups Water
Instructions
- Spray Crockpot with non-stick spray or use a dab of butter around the bottom and sides so the Oatmeal won’t stick.
- Layer the Apple Slices in the bottom.
- Sprinkle with Brown Sugar and Cinnamon
- Add Oatmeal
- Add Water
- Let cook on LOW overnight or 7-8 hours. You are not supposed to stir this. I used a wooden spoon to make sure the oatmeal was all wet before I put on the lid. I will say you can easily double this and it turns out fine. My crew prefers me to double it and just use 7 cups of water instead of 8, they like their oatmeal thick.
- It will yield 4 one cup servings or 8½ cup servings.

I love the idea of making it in the evening and having it ready to go for breakfast.
Yum! I love that this could be put in the night before. I bet it would make the house smell great in the morning!
Since I already had all of the ingredients on hand I’ve already started this in the slow cooker for breakfast tomorrow. I cannot wait to see how it turns out!
