This recipe for Shrimp Scampi with Broccoli and Linguine is simple and easy to make, and delicious enough that the whole family loves it!

Shrimp Scampi
Last week, I posted a Giveaway for Gorton’s products, and mentioned that I was planning to make this recipe, but that my local grocery store was out of the products I needed, due to Hurricane Sandy. Well, today I was back at the store and they had what I needed, so I bought all of the products and made this for dinner tonight.

I started the water boiling for my Linguine, and began to saute my shrimp. My crew puts up a fight with plain broccoli, so I took a short cut tonight and bought a package of frozen seasoned broccoli. I microwaved it while the pasta was boiling and the shrimp was cooking. Next, I added the broccoli to the shrimp for a few final minutes, so it could absorb some of the additional flavors from the shrimp sauce. I plated the food and added some cheddar cheese on top.

The family loved this dish, and can’t wait to have it again. In fact, there are NO leftovers! For next time, I would use a larger pan to cook the shrimp and broccoli in, and I would add the pasta to the pan to absorb some of the sauce as well before serving. With growing boys in the house, I might also double the recipe to fill them up, and have some leftovers for lunch the next day.
