Nutella Banana Chocolate Chip Muffin Recipe

Today is World Nutella Day, so I thought I’d try a recipe for Nutella Banana Chocolate Chip Muffins for Breakfast. The original recipe I have had for years, uses Peanut Butter, but as I mentioned in my No Bake Chocolate Oatmeal Cookies Recipe, you can pretty much substitute Nutella in many recipes that call for Peanut Butter.

Joshua is home sick today, and I was just throwing this together, and forgot that I needed to be taking pictures of all the steps, my preferred way to share recipes. Instead, I only have one picture of the final product, as seen above. But hey, I did remember to slice one open so you could see the insides :)

Here are the ingredients I use:

  • 1/4 cup Butter (salted)
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp Vanilla Extract
  • 1/2 cup milk
  • 3 bananas – you can mash them up, you’ll be blending them into the batter
  • 2 cups self rising flour
  • 1 cup chocolate chips
  • 2 tablespoons nutella (Original recipe called for Peanut Butter. Can also use Sunbutter, etc to meet your dietary needs).
This is how I put it all together:
  • Preheat your oven to 375
  • Place your muffin liners in the cupcake/muffin tin
  • Melt your butter – I prefer to use a saucepan on the stovetop
  • Mix your Sugar and eggs, then add in the butter, vanilla, milk, nutella, and bananas one at a time until it’s smooth and creamy. *Note: Some people LIKE banana chunks in their muffins. That is NOT me, so I blend mine in. If that IS you, you can wait and add the chunks post blending. Y’all know I am picky :)
  • Slowly add in the Flour, then the wait and add the chocolate chips at the very end. DO NOT use the blender on those, just a quick spin or two with a spoon will add them in.
  • I use an ice cream scoop to transfer my batter from the bowl to the muffin liners.
  • Bake for about 20 mins at 375. If they aren’t quite done, bake a few more mins until a toothpick inserted comes out clean.
On a side note: For this recipe (and many others) you can add a drop of food coloring if you’re making this around a holiday. A couple drops of red for Valentine’s, Green for St Patrick’s Day, etc. The kids get excited to find that, and it doesn’t affect the recipe!
